Three words on the shopfront, and most of what happens inside follows from them. Pastry made in small batches. Gelato churned in the Italian way. Coffee pulled properly, then given room to be playful.
Everything is eggless. Not as a substitution, but as the starting point, which is why the chocolate work leans on ganache and mousse, the sponges stay light, and the cheesecake is burnt rather than baked pale.
